Frittatas are such an easy and versatile breakfast item and it happens to be Keto as well! You can use pretty much anything you have on hand for a filling.  This recipe is for a cajun broccoli, bacon, and cheddar frittata.  Other delicious options I sometimes make are spinach, tomato, feta, and oregano. Asparagus, prosciutto, and swiss. Tomato, basil, and goat cheese. The filling options are endless. 

Traditionally a frittata gets started on the stovetop and then transferred to the oven but for this one the only stovetop use will be to soften the onions and fry the bacon.

OVEN BAKED FRITTATA (KETO)

Cook time: 20 mins

Equipment:

Cast-iron skillet (9 inch), sheet pan, mixing bowl, cheese grater, whisk, slotted spoon, paper towel

Ingredients:

  • 6 strips  Bacon, rough chop

  • 1 cup     Broccoli florets (cut if large)

  • ¼  cup   Onion, small dice

  • 6   Eggs

  • ¼ cup   Heavy whipping cream (35%)

  • 1 cup   Cheddar cheese, grated

  • 1 tbsp   Cajun seasoning

  • 1 tbsp   Mustard powder

  • 1 tbsp   Olive oil

  • Salt & Pepper

METHOD:

  • Preheat the oven to 425 F and set to broil.

  • Heat up cast iron pan on the stovetop

  • Cut broccoli florets into bite-sized pieces and toss with ½ the olive oil, salt, and pepper.

  • Spread florets out on a baking sheet and stick in the oven to char them off, approximately 20 mins depending on how large you left your florets. Stir them and check how they are doing at the 15 min mark. They cook quite fast towards the end.

  • Add the bacon pieces to your cast iron and fry until crisp. Remove with a slotted spoon onto the paper towel.

  • Grease the side and bottom of the cast-iron skillet with the grease from the bacon. Drain any excess.

  • In the same cast-iron skillet sauté the onions until translucent and then remove from heat. 

  • When the broccoli is charred remove it from the oven and set it aside

  • Set oven temperature to 350 F on bake.

  • Mix eggs, cream, cajun, and mustard powder together in a bowl. Do not beat eggs too hard.

  • Spread out bacon and broccoli evenly in the skillets with the onions.

  • Pour egg mixture over the fillings.

  • Sprinkle evenly with the cheddar cheese. 

  • Place into the oven and bake for about 20 mins or until eggs are set.
