I love me a good quiche. Quiche is so adaptable to whatever you have on hand. Feel free to omit the sausage for a vegetarian version of this dish. If you do just add a pinch of salt. This quiche is easy, savoury and delicious.  If this was on my menu at Revival, I’d call it…

FREAK ON A QUICHE

SAUSAGE & PEPPER QUICHE

INGREDIENTS

Par-Baked Pie Shell: 9 inch shell
Sausage, ground: 1 cup
Green Onions: ½ cup 
Red Peppers: ¼ cup
Arugula: ½ cup
Cheddar Cheese: 1 ½  cup
Crushed Red Pepper Flakes: 2 tsp
Eggs: 5
Milk: ¼ cup

DIRECTIONS

  1. Preheat oven to 350 degrees Fahrenheit. Fry up your ground sausage in bite sized chunks. Drain and spread out in pie shells.

  2. Dice your green onions. Spread out your arugula and the green onions over the sausage in the pie shell. 

  3. Dice up your red pepper and lightly fry it, approximately 2 mins before adding it to the pie shell. Make sure to evenly sprinkle your ingredients. 

  4. Grate your cheese. Take a ½  cup of the cheese you grated and put aside for later. Spread the remaining cheese over the mixture in the pie shell. 

  5. Whisk your eggs, milk and crushed red pepper flakes in a bowl until well blended in. 

  6. Pour egg mixture into pie shell. The filling should be just shy of the rim of the pie shell. 

  7. Bake in the oven for approximately 35 minutes or until the eggs have set. 

  8. Remove the quiche from the oven and coat the top in the remaining ½ cup of cheese.

  9. Bake for another 3 - 5 minutes to melt cheese.  

  10. Remove from the oven and let sit for 5 minutes and then cut and serve.
